HACCP Systems

We partner with clients to develop new HACCP plans and supporting Prerequisite Programs as well as evaluate existing plans for risk mitigation effectiveness as well as compliance to FSMA and GFSI systems.

 

Preventive Controls Plan Development

We work with clients to conduct risk assessments and HACCP plan structure to ensure that they are providing the appropriate levels of risk mitigation under FSMA.

Process Validation

Our experience covers a wide range of validations including but not limited to:  Thermal processing for manufacturers and retail establishments, metal detection and x-ray, sanitation programs, sanitary transportation programs, establishing extended run programs, and annual CCP validations.

 

Process Authority Letters

We offer Ph.D. level expertise, industry experience in a wide range of food and beverage products and processes, nationally certified microbiologist, and access to third-party biosafety level 2 laboratories that enable us to serve as a process authority for many FDA- and USDA-regulated products. At this point, however, we are not serving as a process authority for low-acid canned foods that fall under 21CFR113.

Shelf Life Determination

We work with a wide variety of clients to determine shelf life of products for food safety and spoilage using Ph.D. level expertise, industry experience in a wide range of food and beverage products and processes, nationally certified microbiologist, and access to third-party biosafety level 2 laboratories.

 

Food Code 2017 Compliance

The FDA requires that a processor of acidified foods provide evidence of food safety through Process Schedules.  The scheduled process specifies the pH and other critical factors that must be controlled to assure the manufacture of safe acidified foods.  Etna provides Ph.D. level expertise industry experience in a wide range of food and beverage products and processes required to assess and develop Process Schedules along with the required documentation to the FDA.
